Worked example
A 60-seat restaurant with a dishwasher, open 14 hours: assume 60 meals per peak hour × 6 gal × 2.5 h × 2 = 1,800 gallons. A 24-hour casino-adjacent diner with the same seats: 60 × 6 × 2.5 × 3 = 2,700 gallons. A single-service coffee shop open 10 hours: 60 × 2 × 1.5 × 2 = 360 — which the 750-gallon minimum rounds up. The floor is the floor.
What else plan review will want
- Written city approval before installation ((i)b) — and Sparks requires a written permit of approval before any pretreatment device operates (SMC 13.39.070)
- Two compartments, outside the building, restrooms excluded
- Screens on connected fixtures; food solids limited to half an inch
- On a change of ownership, proof the existing tank is “properly sized and functioning” is the new owner’s burden
